Ersi Emmanouilidou
Bioprocess engineer lead
Originally from Greece, she studied Molecular Biology at the University of Crete. After a short adventure as a research associate in the University of Athens, she moved to Edinburgh to do her MSc in Brewing and Distilling, at Heriot Watt University. She spent five years in the brewing industry in the UK, Brewdog and Beavertown. During her time in Beavertown, she had the chance to be a member of the commissioning team of the largest craft brewery in London! Looking for a new challenge, she joined the production team of Mosa Meat in 2022, as a Lead Process Engineer, where she has been involved in multiple R&D and Production and scale-up projects.
Ersi’s responsibilities in CAS are to take care of organising and coordinating the day-to-day activities of the team, to ensure clear communication with the scientific teams and external companies. She’s also hands-on involved with lab activities involving bioreactors of different scales.
During her free time, Ersi really likes travelling in far-away lands and trying all the local foods. She takes pleasure in cooking at home and trying new recipes; she rarely makes the same dish twice! She also likes nature and the outdoors, she enjoys hiking and biking but also she’s a keen horse rider! Fun fact: Her favourite microorganism is yeast and she always has a teddy of a Saccharomyces cerevisiae, with 5 budding scars, on her desk, to remind her of how much it has offered to humanity!
